Chef Steve pursued his passion for food at Johnson & Wales University in Charleston, SC where he incorporated his southern heritage and French techniques to hone his own unique style. His background is what influences his palate today. A purveyor of fresh, local fare, Chef Steve's menu cultivates pure ingredients that are indigenous to his home state. From house-made bread, pasta and stocks to the all-natural pork raised at Heritage Farm in Goldsboro, produce delivered from Second Hills Farm daily and seafood from the shores of the east coast, Chef Steve's cuisine personifies southern hospitality.

As founding partner of On The Nines Bistro - Chef Jordan leads an acclaimed restaurant featuring a dynamic menu rooted in french culinary techniques with a southern twist. His dishes include everything from his take on classic comfort foods to gourmet cuisine you’d expect at the finest restaurant in a major metropolis.

Alva Whyte

Born in Jamaica, Alva was raised and educated in England. His joy of cooking with his mother on weekends inspired him to attend culinary school before coming to the United States. Trained in classic French culinary techniques, Alva loves the freedom of being creative in the kitchen, the ever-changing selection of menu items that comes with preparing catering dishes, and the opportunity to continue learning from Chef Steve Jordan in the fast-paced kitchen environment. Alva is part of the culinary team of BOUK Catering, based at On The Nines and servicing our on-site private event space, Circa 1873 at On the Nines Bistro in addition to our hospitality partner, The Venues at Langtree a multi-venue estate in Mooresville. Alva and our hospitality team also provide catering services privately and at third party venue spaces.Alva also contributes his talents to On The Nines’ wine dinners and special events where a skillful hand and attention to detail is necessary when plating dozens of unique dishes to be served nearly simultaneously to our guests. Despite cooking all day, Alva still enjoys preparing fresh dishes at home. Oxtail, peas and rice, and curry chicken are his favorites. His favorite On The Nines dish? The Ribeye Steak
